University of Minnesota Extension's vegetable IPM team published its final weekly update of the season this week, and buried in the wind-down notes on tomatoes and beans is a piece of onion guidance worth doing actual math on. The update gives a harvest-readiness signal as a percentage range, not a single number, and a storage spec with a temperature, a humidity band, and a duration. None of that is useful until you convert it into decisions for the specific onions sitting in your own bed, which is exactly the gap between a general guideline and a plan you can act on this weekend.
The 50-to-80 Percent Signal, Counted Out
The extension's harvest cue is that onions are ready to pull once 50 to 80 percent of a plant's leaves have yellowed and started to flop over. That's a wide range on purpose, since bulbs in the same bed mature unevenly, but treating it as one fixed percentage misses the point of why it's a range at all. Count the leaves on a representative plant first: a mature onion typically carries 8 to 13 leaves. On a 10-leaf plant, the 50 percent mark is 5 leaves down, and the 80 percent mark is 8 leaves down. Bulbs that hit the 5-leaf mark first are the ones to pull and use fresh, in the kitchen within a few weeks, since less-mature necks take longer to dry down cleanly for storage. Bulbs that reach 8 leaves down are the ones to prioritize for long-term storage, since they've had the most time to redirect energy from leaf to bulb and will cure faster with a smaller, already-drier neck. Harvesting in that order, low-count first and high-count last, turns one uneven bed into two harvest batches instead of a single all-or-nothing pull date.
Curing Space: How Much Room a Real Harvest Actually Needs
The extension update also stresses at least two weeks of curing in a well-ventilated space before onions go into storage, and this is where a lot of home harvests run into a physical bottleneck nobody plans for. Cured properly, onions need to sit in a single layer with air moving on all sides, not piled in a basket. A medium onion runs roughly 3 inches across; give each bulb an inch of clearance on every side for airflow and that's about a 5-inch by 5-inch footprint, or 25 square inches per bulb. A harvest of 60 onions, a realistic yield from a single well-spaced 4-by-8 bed, needs 1,500 square inches of curing surface, just over 10 square feet, which is more than most kitchen counters or a single wire rack can offer at once. That's the argument for curing in shifts as each batch comes ready rather than trying to lay out an entire harvest at the same time, or for stacking multiple mesh-bottomed trays a few inches apart so the square footage stacks vertically instead of needing 10 square feet of single-layer floor space.

Budgeting the Storage Window Against How Fast You'll Actually Eat Them
Stored at the extension's recommended 32°F and 65-75 percent relative humidity, cured onions hold for 6 to 9 months. That's a wide enough range that it's worth checking your own consumption rate against it rather than assuming any properly cured onion will simply last as long as you need. Say a harvest of 60 onions averages 0.5 pound each, for 30 pounds total. A household using 1.5 pounds of onions a week, roughly two medium onions, works through that 30 pounds in 20 weeks, about 4.5 months, comfortably inside even the low end of the 6-to-9-month window. Double the consumption rate to 3 pounds a week and the same 30-pound harvest is gone in 10 weeks, which means the storage window was never the limiting factor at all; the harvest size was. Running that comparison before storage day tells you whether you actually need root-cellar-grade conditions for the full stretch, or whether a less-than-perfect spot that holds for 3 to 4 months will still get you to the point where the onions are eaten, not spoiled.
Why the Range Narrows Fast Once Conditions Slip
The 6-to-9-month figure assumes the storage spec is actually held, and 32°F to 65-75 percent humidity is a narrower target than most home storage spots hit by default. A garage or basement running 45 to 50°F, common for an unheated space in early fall before winter fully sets in, sits well above the 32°F target, and onions respire and sprout measurably faster as storage temperature climbs. Humidity below the 65 percent floor dries bulbs out faster than intended, causing shriveling; humidity above 75 percent raises rot risk instead. Neither failure mode announces itself immediately, which is why the extension's two-week minimum cure time matters as much as the storage numbers that follow it: an undercured bulb carries excess moisture at its neck into storage, and that moisture is what accelerates rot regardless of how close the storage temperature and humidity land to spec.
